Ever met a true Irish man?

Well, let me introduce you to our friend, Patrick O'Riley. Yes, that's his name. He's the front desk manager at our gym and is one of the nicest guys you'll ever meet. He always gives such nice and encouraging comments to you as you enter and leave the gym. Especially on those days when you really don't want to be there. We've all had them, right? He's such a down to earth kind of guy that it's hard not being friends with him.

He's the biggest fan of my frosted sugar cookies. There was a conversation he and I had about two years ago about my cookies (not sure how it started) but he found out about them and of course, he talked me into bringing him some. Ever since then he's been nagging me to bring him cookies. If you only knew how many times he bugs me for them, you would consider it nagging too. It got so bad, I quit going to the gym for 2 months. I couldn't take it every time I went in there. And just so you know, I don't take them to him every time he asks, but a couple times a year he'll be treated to my cookies. Like I said, he's a big fan! He'll even pull a complete stranger (to me) aside at the gym and tell them that I make the best frosted sugar cookies in town. As flattering as that may be, it always embarrasses me like no other. And he does this all the time. So in the end and when it comes right down to it, you gotta love our friend, Pat, right?

So getting back to the reason behind this post... As you can see by his attire he truly takes his Irish heritage seriously. So much so that he tattooed a leprechaun on his lower leg.

He told me that when his ancestors came to America they weren't allowed to have the "O" in their last name because they were now considered Americans. As time went by, his "now" great-grandfather decided that he was going to put the "O" back in their name and keep their Irish heritage living on. So Pat admires that about his great-grandfather. He even told me that he's been to Ireland and has kissed the treasured BLARNEY stone. An Irish man dressed in green with a leprechaun tattoo who's kissed the blarney stone...what more can you ask for on St. Patrick's Day?

Again, I spent the day making "green" treats for some close friends. I made those jamwiches (from Valentines post) again but instead I used lemon curd and tinted it green for the occasion. And I made a new recipe for Mint Oreo truffles which came from another blog called "Bakerella". I frequent a baking blog and a cupcake blog to see the latest photos of all things yummy!

So as you can see I made myself extremely busy yesterday. Sometimes I wonder why I get so caught up in the spirit of certain holidays.

That picture of him is SOOOOO funny! I'm not sure you could rate his as a "traditional" Irish man, however, people like him make these holiday's fun!

Quit complaining about the cookies. If you're going to make them and pass them out...you're going to get bugged about them. If you don't want to be hasseled, then make some lousy cookies! Duh!

The treats were so good. Alexandrea ate most of the cookies. She loved them. We loved the truffles but were trying to figure out how you made them. They were almost a cross of a cake, brownie mix. We couldn't figure it out. How did you make them?
